Growing up on a Munduberra farm, I’m proud to be the first ever Ambassador of Citrus Australia. Here is the recipe for my yummy Mandy Moments…..
Mandy-Moments
Makes 24
• 1½ cup butter, softened
• 2/3 cup caster sugar
• 2¾ cups plain flour
• 2 mandarins, zested
Preheat oven to 170C. In a medium bowl, cream together butter and sugar with a hand-beater until light and fluffy. Stir in flour and zest with a spoon until mixed well. Line a baking tray with baking paper and using a teaspoon roll mixture into balls and place on tray. Gently press with a fork and bake for 10 minutes or until lightly golden.
Optional: Serve individually or joined together with a lovely citrus icing.
